Crab stuffed mushrooms - Paula Dean

Ingredients
1 cup crabmeat
1/2 cup cream cheese
1/2 cup fresh parsley leaves, chopped
1/2 cup green onions, chopped
4 tablespoons Parmesan
House Seasoning, recipe follows
2 portobello mushroom caps, or 10 white mushrooms caps
1/2 cup bread crumbs
Nonstick cooking spray
Directions
Preheat the oven to 375 degrees F.

Combine the crabmeat, cream cheese, parsley, green onions and Parmesan. Season with House Seasoning, to taste. Stuff the mushroom caps with the mixture and top with bread crumbs. Spray the tops with nonstick spray to help them brown. Transfer to the oven and bake for about 20 minutes, or until the filling is hot and melted.

House Seasoning:
1 cup salt

1/4 cup black pepper

1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.


Richard made these for me for Mothers Day (with some help of course). They were YUMMY!!

Strawberry Rhubarb Pie

I made this last week and my husband, who swears he hates this kind which is why I made it so I wouldnt have to share, all but inhaled it. I did cheat though and use pillsbury pre-made crust. It was quite yummy!

STRAWBERRY-RHUBARB PIE

Double pie crust
3 c. cut up rhubarb
1 1/3 c. sugar
1/4 c. flour
1 pt. sliced fresh strawberries
1/3 c. sugar
2 tbsp. butter

PIE CRUST:

1/2 c. lard or 1/2 c. and 1 1/2 tbsp. vegetable shortening
1 1/2 c. flour
Enough ice water to moisten

Toss rhubarb, sugar, and flour in a bowl. Stir in strawberries. Place in pie shell. Dot with butter. Cover with second crust, make vent makes and sprinkle with sugar. Bake at 425 degrees for 15 minutes, then at 350 degrees for 45-50 minutes.
Fresh strawberries and sugar may be replaced with 10 oz. pkg. of frozen strawberries, partially thawed.

For pie crust, use pastry cutter to blend shortening and flour. Moisten with water, divide into two parts, and roll out dough. Serves 8.

My task for today

One of the kids at daycare this week had some so I'm gonna make some!

LEMON POPPY LOAF

1 box lemon cake mix
1 pkg. lemon instant pudding
1 c. water
1/2 c. oil
4 eggs
1/4 c. poppy seeds

Mix ingredients together well. Bake in greased and floured 9"x13" cake pan (or two loaf pans) at 350 degrees for 30 to 40 minutes.
