Pita Pizza!

This is one of my favorite things in the world.
You can make it low fat, you can make it fattening, you can put what ever you want on it.

For low fat:
Whole wheat pitas,
tomato sauce
herbs
low fat meats
low fat cheese
lots of veggies


For those who dont care about fat:
White pitas
pre bottle pizza sauce
mozza and cheddar cheese
pepperoni
ham
pineapple
assorted veggies


Pre heat oven to 350 degrees
put one to two tbsp of pizza sauce or tomato sauce,
next put 1/2 cup to 1 cup of shredded cheese
place desired toppings on top of cheese (I find the cheese stays on better and the veggies cook better)

Place in oven for 10-15 min
I also broil it for 1-2 min to get the cheese a little crispy and the meat really well cooked!

Cut into 4's, let cool and ENJOY!!!

Strawbery Rhubarb pie!

STRAWBERRY-RHUBARB PIE

Double pie crust
3 c. cut up rhubarb
1 1/3 c. sugar
1/4 c. flour
1 pt. sliced fresh strawberries
1/3 c. sugar
2 tbsp. butter

PIE CRUST:

1/2 c. lard or 1/2 c. and 1 1/2 tbsp. vegetable shortening
1 1/2 c. flour
Enough ice water to moisten

Toss rhubarb, sugar, and flour in a bowl. Stir in strawberries. Place in pie shell. Dot with butter. Cover with second crust, make vent makes and sprinkle with sugar. Bake at 425 degrees for 15 minutes, then at 350 degrees for 45-50 minutes.
Fresh strawberries and sugar may be replaced with 10 oz. pkg. of frozen strawberries, partially thawed.

For pie crust, use pastry cutter to blend shortening and flour. Moisten with water, divide into two parts, and roll out dough. Serves 8.

Cherry Cheese Flakies

Ingredients
8 sheets phyllo dough, covered with a damp cloth
1/3 cup butter, melted

1 (125 g) package cream cheese, softened
2 tablespoons sugar
1/2 teaspoon grated fresh lemon rind
2 teaspoons lemon juice
1/4 cup whipping cream, whipped


1 (540 ml) can cherry pie filling

Directions
1Lay one sheet of phyllo dough on a damp tea towel.
2Brush lightly with melted butter.
3Repeat layering of dough and buttering (3-times)--cut dough into 6 rectangles with scissors round corners gently pleat each rectangle to fit into greased muffin cups (2-1/2 inch).
4Bake at 350°F for 6-10 minutes, or until crisp and browned.
5Cool.
6Beat cream cheese, sugar, lemon rind and juice until smooth.
7Fold in whipped cream.
8Spoon mixture and cherry filling into each cup.

These are simply scrumptious!

REally yummy Bread!


ITs been a while so I better start picking up here!

Bread! It was yummy!!!

Everything gets put in the kitchen aid
4 Tbls dry yeast ( room temperature )
2 eggs ( room temperature)
In mixing bowl pour
5 cups hot tap water
2 Tbls salt
2/3 cup oil
2/3 cup honey
The 4 Tbls yeast and 2 eggs
Mix in your flour ( 12 cups )
Add flour until dough leaves the side of the mixing bowl.
After all flour is in.. knead for 10 mins in the mixing bowl.
Pour pool of oil on counter top... pull the dough out with oiled hands, and push the dough into a big ball.
Cut ball into 4 pieces... shape each into a loaf.
Place in pam sprayed loaf pan
Set the 4 loaf pans on top of the stove and cover with thin kitchen towel... turn oven on to 350 degrees
Let dough rise about 35 mins until its about 11/2 inches above side of pan

I halfed the recipe which is why there are only two but they are really big!!
Place in oven for about 35 mins
When done.. take out of pans and place on cooling rack
Slightly butter the tops
